You probably cannot set the white balance on a phone. Cameras are designed to have a mid grey exposure so dark wood will probably dominate the exposure and over lighten the jewelry. You could solve this by under exposing until you get the right level but on a mobile?

Maybe not. Your best bet is probably to get a mid range color temperature background such as grey tissue paper then try to find a piece of wood that matches. Or stain a piece of wood until its the right shade. Many devices now use proprietary colourspaces to extend their colour range beyond basic sRGB. Etsy as well as most of the internet ignore the Embedded Colour Profile, and treats it as sRGB without applying the corrections, so colours are inaccurate.

White balance: most phone's do not have a custom white balance function, so put a white piece of paper at the edge of shot where it can be cropped out. Make sure that the white is not over exposed in the shot taken before editingit should be a light grey. Use the colour correction tool in a decent editor, you click the dropper cursor on the white and it adjusts colours.

Important: adjust brightness after adjusting white balance. Don't reflect light using shiny surfaces, foil, glass or mirrors.

They will tint the light, and any ripples in them can cause hot spots of lighting. Instead use white copier paper taped to a cardboard box allows it to stand up. The bounce of light off white paper is diffuse, non-directional, so is softer and avoids tints or hotspots.

Do not light from behind the subject. It is likely to cause bright reflections of the light source off the product or background surface, as well as putting the front face of the product in shadow. That messes with colour accuracy too. Unfortunately some cameras default to boosting saturation, even on their normal settings.
